About the Recipe
This is one of those recipes that could be considered fool-proof, which is why it’s perfect. You just violently shove some garlic inside a leg of lamb and play on your Nintendo while it cooks in the oven. Seriously
Ingredients:
Leg of lamb – 2.5kg
Garlic – 6 cloves
Rosemary – 2 sprigs
Salt – about 1 tbsp
Vegetable oil – about 1 tbsp
Method:
With the tip of a sharp knife, create around 12 small pockets in the fat-covered (top) side of the leg. They should be about 4cm deep
Cut the garlic cloves in half
Cut/break up the rosemary into 2cm pieces
Stuff a bit of rosemary and half a garlic clove into each pocket
Rub down well with vegetable oil
Sprinkle a generous amount of salt over the top, rub into meat
Place into an oven, preheated to 220c (with fan on) for 15 minutes
Turn down the temperate to 160c and cook until the thickest part reaches 55c
Remove from oven, let the meat rest for 30 minutes
Carve and enjoy
